Having recently joined the esteemed establishment, Chef Panattoni brings a fresh perspective to the menu, focusing on traditional Italian cuisine infused with local Canadian ingredients. During our family dinner at the Chef’s Table, we were treated to a gastronomic journey that began with an antipasti platter featuring an array of cured meats, seasonal vegetables, and artisanal cheeses. A standout element was the rich truffle honey served alongside the cheeses, elevating the tasting experience to new heights. The attention to detail in presentation and flavour truly reflected Chef Panattoni’s philosophy of creating memorable dishes that speak to the heart.

As we delved deeper into the menu, the Dentice Rosso e Purèa di Topinambur—red snapper accompanied by Jerusalem artichoke purée—captivated our taste buds with its delicate flavours and impeccable execution. The snapper was cooked to perfection, flaky and moist, complemented beautifully by the earthy richness of the purée.

Another highlight was the Pappardelle alle Alche e Riccio di Mare, a delightful seaweed pasta paired with sea urchin cream. This dish showcased Chef Panattoni’s skill in crafting fresh, handmade pasta that is not only visually stunning but also deliciously satisfying. Each bite transported us to the shores of Italy, where the freshness of the sea was palpable.

The experience at TOCA is enhanced by the restaurant’s stunning design, which features a striking glass-walled cheese cave. This centrepiece not only serves as a storage space for a vast selection of gourmet cheeses from around the world but also acts as a focal point for the dining room, showcasing the restaurant’s commitment to quality ingredients. Guests are invited to explore the extensive cheese offerings inside the cave, which include local Canadian varieties and international delights, perfect for pairing with the extensive wine list.

Wine pairings at TOCA are carefully curated, and our dinner was no exception. Each dish was paired with exceptional wines that complemented the flavours beautifully. The sommeliers are knowledgeable and eager to share their expertise, ensuring that each glass enhances the overall dining experience.

TOCA also serves brunch, offering a vibrant buffet that includes a seafood bar and a mimosa bar, making it a perfect spot for weekend gatherings.
