There’s a renewed energy at Soluna. The Toronto favourite has officially entered its next chapter with a beautifully refreshed interior and a completely reimagined menu.
Led by Executive Chef Daniel Ken, whose Japanese-Brazilian heritage and global culinary experience span Brazil, Italy, Japan, and beyond, Soluna’s new identity blends Japanese precision with Latin passion. The result is a menu that feels both intimate and expressive, designed to be shared, savoured, and appreciated as much for its artistry as its flavour.
The Tasting Experience: Where Each Bite Tells a Story
The Spicy Tuna Crispy Rice was fresh, balanced, and full of texture. Each bite offered the perfect crunch from the rice cake, a creamy layer of tuna, and a gentle kick of jalapeño that brought it all together.
Next came the Mushroom Dumplings, delicate and refined. Unlike traditional pan-fried dumplings, these arrived soft and almost ethereal, with a hint of truffle that melted on the palate.
The Wagyu Tostadas were a showpiece in every sense. Served tableside, the dish featured premium A5 wagyu atop crisp seaweed, a luxurious bite that was rich, textural, and beautifully executed.
For the main course, the Miso Black Cod stood out for its simplicity and balance. Perfectly cooked and velvety in texture, it delivered a harmonious blend of sweet, savoury, and smoky notes, a true testament to Chef Ken’s craftsmanship.
The Cocktails: Elegance in Every Sip
Soluna’s cocktail program feels as curated as its menu. The Jade Cloud is a must for matcha lovers: creamy, earthy, and just sweet enough to remain perfectly balanced.
The Papi Soluna offers a vibrant twist on a classic margarita, infused with passion fruit and finished with a tajin rim for a touch of spice. It’s served with a flaming passion fruit shell, an eye-catching detail that captures the restaurant’s flair for presentation without feeling overdone.
The Space: Warmth, Glow, and Global Glamour
The redesigned interior channels Moroccan warmth and coastal sophistication, with terracotta tones, soft lighting, and lush greenery that create an inviting, sun-drenched atmosphere. It’s both elegant and relaxed, the kind of space that naturally encourages conversation and connection.
Beyond the menu, Soluna continues to cultivate a lively rhythm with Latin Wednesdays, Soluna After Dark Fridays, and a new brunch series launching soon. The result is an experience that extends beyond dining, a seamless blend of food, music, and mood.
